Jairo Arcila has been cultivating coffee for over 40 years, rooted in traditional Colombian farming. His sons, Felipe and Carlos, brought fresh vision through Cofinet—introducing innovative fermentations and championing specialty coffee, which has elevated the family’s reputation globally.
One of their most remarkable contributions is the Chiroso varietal, named after a local slang word describing its elongated shape. Unlike the Bourbon-Typica group common in Colombia, Chiroso shows genetic ties to Ethiopian landraces, offering a rare and distinctive profile.
In this lot, processed with their signature EF2 method—fermenting cherries at controlled temperatures below 22°C before natural drying—the result is vibrant and complex. The cup is juicy and fruit-forward, with flavours of fruit punch, lemongrass, and bright tropical acidity, a true showcase of innovation meeting tradition.
